Even though it's not a Baltic dish - we had to include it! Ajvar is one of the most delicious specialties and greatest secrets of the Balkan cuisine. With slightly varying recipes. Some include ripe tomatoes and even string beans. Ajvar is a seasonal salad, always made in late summer and early autumn, just after the pepper harvest, when many households also can or bottle their own Ajvar for use throughout the winter season.
